John Correll is a full-time writer. His background includes pizzeria and restaurant manager, training director, corporate VP, entrepreneur, college instructor, business consultant, and, more recently, packaging designer and inventor (holding 43 patents). Nearly all facets of his professional background pertain, directly or indirectly, to the pizzeria and restaurant industry. He enjoys fishing, hiking, and long-distance bicycling. If you are obsessed with pizza like I am, you will truly enjoy the information provided in this book! The book covers many things about pizza and is a book great for the would be proffesional, pro or pizza geek! Make pizzeria style pizza with real recipes that are not dumbed down for ease of preparation. Highly reccomend !

Best book I have on pizza

I have about a dozen books on Pizza. This is by far the most helpful book I have on how to make a great pizza. My other books are "cooks books". The Encylopizza is written for people who either run, want to run a pizza restaurant or just want to know the science that goes on when you mix water flour and yeast.
